There are companies who provide insight and data about the audience to the marketing companies. So, they can target the audience more carefully and have conversions. But exactly do they do? I mean facebook also gathers data, how this is different from theirs?

One thing I will say that the details provided by those companies are more detailed and also they provide many customized tools to manipulate that data. To increase productivity, gathering more information, generating leads, filtering leads and even getting conversions.
These companies gathers data according to age, sex, demographics, internet browsing behavior, making purchases etc. So, you can imagine even though they look like facebook insights but actually they are far more sophisticated.

They are similar to fb insights yes but not the same. Those data's provided by the companies are even more detailed and user behavior oriented. Because they just don't collect data, they collect it & analyze it to understand what actions can be taken or not taken in order to compel the user to do something.

Well, some of these insights come from platforms built by specialists. A fintech app development firm might create tools that integrate and analyze multi-source data, offering marketers a wider view than just one platform, like Facebook.

From what I've seen, a lot of these "data companies" are essentially aggregators. They collect information from multiple public and commercial sources, then organize it into a searchable database.
A typical process is something like:
Sources → data collection/scraping → matching & enrichment → database → customer export
The sources can include public websites, company pages, professional profiles, business directories, third-party databases, and other data providers. Some companies also license data from other vendors rather than collecting everything themselves.
Once the data is collected, they can match records based on things like name, company, domain, job title, location, etc., and then add fields such as email addresses, phone numbers, company information or technologies.
The interesting part is what happens after the data enters the database. People change jobs, companies change domains, emails become inactive, and information on the web changes constantly. So a database can have a very large number of records while still containing a fair amount of outdated information.
That's why I'd distinguish between data collection and data verification. Scraping/aggregation is good for creating a large pool of potential contacts; verification and ongoing updating are what determine how useful that data actually is for a particular campaign.
Also, not every "data company" necessarily scrapes everything themselves. Many are effectively sitting somewhere in the middle of a data supply chain — buying, licensing, aggregating, enriching and reselling information from multiple sources.
