Whatever you like. Just make it relevant. Many people are focusing on even blank anchor texts (the image links). Maybe not look so good but they sure can get the job done quite well.

well, it depends on you and the strategy you are following!
if you want to do branding, then go with the brand name and if you want to improve the position of the specific keyword then choose that keyword.

Keywords are usually used as Anchor text. But, be sure that you dont spam your website by using Anchor Texts. Use brand names as well.
