HTML sitemap is a plain text sitemap used by browsers to know and surf through your website pages. XML sitemap is a coded sitemap used to submit in webmaster tool to help spiders crawl them and index the webpages in search engines.

XML grew out of a desire to be able to use more than just the fixed vocabulary of HTML on the web.
An HTML sitemap allows site visitors to easily navigate a website. It is a bulleted outline text version of the site navigation.

In HTML (Hyper Text Markup Language), both the tag semantics and tag sets are fixed. On the other hand, XML (eXtensible Markup Language) specifies neither semantics nor a tag set. In fact, XML is really a meta-language for describing markup languages.
In other words, XML provides a facility to define tags and the structural relationships between them. Since, there is no predefined tag set, there can't be any preconceived semantics. All of the semantics of a XML document will be either defined by the applications that process them or by stylesheets.

HTML is just a general overview of the site, just the pages and info a user needs to be concerned with.
