HTML sitemap is a plain text sitemap used by browsers to know and surf through your website pages. XML sitemap is a coded sitemap used to submit in webmaster tool to help spiders crawl them and index the webpages in search engines.
An XML sitemap protocol is specifically intended for search engine spiders.
XML grew out of a desire to be able to use more than just the fixed vocabulary of HTML on the web.
An HTML sitemap allows site visitors to easily navigate a website. It is a bulleted outline text version of the site navigation.
Sitemap is an XML file which contains the data of all your page URL and other meta data.
In HTML (Hyper Text Markup Language), both the tag semantics and tag sets are fixed. On the other hand, XML (eXtensible Markup Language) specifies neither semantics nor a tag set. In fact, XML is really a meta-language for describing markup languages.

In other words, XML provides a facility to define tags and the structural relationships between them. Since, there is no predefined tag set, there can't be any preconceived semantics. All of the semantics of a XML document will be either defined by the applications that process them or by stylesheets.
The simple thing to say here is that xml sitemap is for search engines and HTML sitemap is for your audience.
